Lifou is the capital of the Loyalty Islands, a far-flung archipelago located off the French island New Caledonia, which is east of Australia. Lifou's traditional staples are fish, coconut, banana, taro, sweet potato and yam; with the influence of France, excellent coffee has also become a regular part of Lifou cuisine. Make sure to try a dish with local favorites lobster, coconut crab and turtle. A good one to sample is bougna, a delicious combination of taro, yam, sweet potato, banana, and pieces of chicken, crab or lobster wrapped in banana leaves and cooked in a ground oven.
